Coonass recipes!

Here are some of my favorite Cajun recipes. All of these were acquired by following my grandmother (a Ville Platte, LA native) around in the kitchen writing down everything she did because usually when we'd ask her how to make stuff she would give us answers like "Well you put just a little little basil and some paprika, but not too too much." My following her around was my attempt to crack the code. If you try them, let me know how they turn out. (posted for metaphive)

Shrimp Etoufee
Although there are thousands of different ways to make etoufee, this is my favorite recipe. I may be biased, but I've had some really good reviews. This recipe can be made as crawfish etoufee (just substitute crawfish for shrimp) but it's really hard to find good crawfish if you're not in or around Louisiana. I made this with those frozen crawfish they sell at HEB from China and it was not so good. I haven't really looked around Austin to see if I can find some better ones, but I don't recommend using anything that isn't Louisiana crawfish that you trust is fresh (even if it is frozen.) To give you a better idea of freshness, crawfish season is from about mid Feb (or Mardi Gras) to mid July. April is the best month (which is why we usually have a huge crawfish boil for Easter.)

Ing:
1 diced onion
1 diced bell pepper
1 diced jalipino
1/2 cup vegatable oil
2 diced celery stalks
3-4 garlic cloves
1 stick butter
2-2.5 lbs Gulf shrimp
2 tblspoons Italian parsley chopped
1/2 bunch green onions chopped (about 5 green onions)
1 tomato chopped

Seasoning mix: (for each lb of shrim; double for two lbs)
1/2 tea white pepper
1/2 tea salt
1/2 tea cayenne
1/2 tea black pepper
1/2 tea sweet basil
1/4 tea dry mustard

Directions:
Saute all ingredients (except shrimp, tomato, green onions and parsley) over medium heat for 30 min. Add shrimp, seasoning mix, and tomato and cook until shrimp gets pink. Add two tblspoons of flour, one cup of water, green onions and parsley. Cook for about 10-15 min, serve over rice.

Catfish Cortbullion (pronounced koo-be-yaw)
Cortbullion is not nearly as popular or common as etoufee, but in my opinion it is one of the best dishes I've ever had. It's kind of Creole in a way because it's fish in a tomato sauce, but still very Southern Cajun in flavor. For this recipe, you'll need to get a whole catfish cut up into steaks WITH the bone left in (NOT fillet. The bone is a big part of the flavor.) I've looked around Austin and I usually just go to Fiesta and get either two medium or one really big catfish cut into about 1-1.25" steaks. I've also heard that a place at Airport and 290 called the Seafood Shoppe has live catfish as well, but I haven't gone by there yet. Since this dish keeps the bones in, be careful when eating it and especially when serving it to children.

Ing:
1/2 onion diced
1/2 large bell pepper diced
3 tablespoons Italian parsley chopped
7-8 cloves of garlic minced (I prefer fresh garlic chopped very finely rather than the minced garlic in a jar)
1 jalipino diced
1/2 bunch green onions chopped
1-1/2 cans 8 oz Huntz tomato sauce

Dir:
Season fish with cayenne, salt and pepper on each side of the steaks. Layer fish with the biggest bones on the bottom of the pot. Then green onion, bell pepper, jalipino, garlic. Layer more fish on top of that then pour one can of Huntz tomato sauce. (Depending on how much fish you have, I tend to add a little more sauce if there's a lot of fish or I'm feeding a lot of people.. The sauce stretches the dish.) Then layer two generous tablespoons of flour over the top (as if you were adding breadcrumbs) so there's a nice topping of flour. Finally layer the green onions, parsley, 1 tea salt, 1 tea pepper, 1 tea cayenne and one can of water. Cook on medium heat for 1/2 hour to 45 min. Serve over rice

***IMPORTANT: Since there are so many bones in the catfish steaks, DO NOT STIR THIS DISH! The order of the ingredients and the layering are designed so that stirring is not necessary. In lieu of stirring, grab the pot by the handles and turn it back and forth in a circular motion. This will sift the ingredients together without breaking up the catfish steaks. Use this method sparingly, as too much WILL break up the bones (I typically shake it about every 10-12 min.) Also, the final seasoning is very much to taste. I use a lot of cayenne and cut back on salt cause I like mine extra spicy, so you can manipulate the combination to your preferences.

Enjoy!

Leah

That's right children.. There will be much dirtyness and freakyness onstage (and off) at Elysium this Thursday eve. Many spankings will be dolled out before and after the show so GET THERE EARLY and buy me a damn shot. You know you want it. Just give in.

Doors open at 9.

Kisses,

Leah

Random note: I've been obsessing about Donnie Darko for like the last week. Seriously.. I downloaded all the music from the movie and I've seen it twice in the last few days. And I heard there is a re-release of the directors cut in theatres, but the most recent date I found was the 23rd. Dammit. Must do more research.

So the shows have been going rather well. Our next one is scheduled for Thurs, Aug. 12th so cancel whatever vanilla hooplah you have going on and come to our show. We have some pics on our yahoo groups site so you should join (to get updates) and check them out: groups.yahoo.com/group/fleshassembly.

In other news... I'll be having a very busy week in Sept. The 14th is the Siouxsie and the Banshees show at Stubbs followed by a three day trip to Vegas! Whoop! It still amazes me that I've never seen Siouxsie perform seeing as how I was so obsessed with her in high school. There's a picture of me in my yearbook of the drama group I performed with that was taken with a cheap camera so it washed out a lot of the white. So in the picture all you can see is my ridiculous Siouxsie makeup and lips. It kicks ass! And the Vegas trip is gunna kick ass... I'm going with some friends from work and we're gunna tear it up Rose style! I haven't been since I was 17 (good lord) so I'm very ready to go. God I love that city. I really want to do a titty bar tour there. I hear they have some amazingly huge topless clubs. Oh yea.

It's on.

Leah
..then I'm gunna break it till it falls apart

Alright children... I'll be in London from Monday until the following Monday the 17th. I know you're jealous, but it's ok; I'll take lots of pictures! I'll be in Houston for a couple of days after I get back (jetlag,) and I'm leaving early tomorrow morning so I'll be MIA for about a week and a half.

I know you'll miss me; you'll just have to make due. In my absence I suggest the following:
1. Build your pain tolerance
2. Build your alcohol tolerance (because I know I'll be building mine)
3. Buy me presents! (Anything black and/or vinyl will work.. I could also use some cat-o-nines and a new bullwhip)
4. Sneak into my house and clean it!
5. Pine away for my arrival

I'm sure you'll find something to keep you busy.

Leah

Well I have to say that the show was AWESOME. We had a really great response and it inspired us to reform fleshassembly! (Add us for updates, or send your email address and we'll send you email updates.) BPC kicked major ass and I have a crush on all three of the girls doing the fetish show. Candyxxx even invited me to beat my sub on stage with them, to which I happily complied.

So we're reforming and going to start doing actual coreographed shows at Elysium at least once a month (probably twice or so) and I'll keep this journal and the official group's journal updated. We got a good review with some great pictures in Rank and Review (pick it up ASAP because they don't have a website that I can find.) As soon as I get some pictures, I'll post links (and if you have any, you should hook a girl up... I know I saw many a flashbulb at the show.)

We're taking over this city.
Looking for a fun fetish show with great industrial goth rock? Well I have the show for you. This Friday 4/30/04 Bozo Porno Circus will be performing with a live fetish show hosted by Flesh Assembly at Elysium Nightclub. There will be plenty of latex, religious sacrilege, and all the spankings your dark little heart can handle.

A DARK MENACING WORLD! After seven years of outlandish local performances, Bozo Porno Circus (BPC) broke onto the scene in 1998 with an award winning self produced CD entitled ~Cybersmut (ToneZone: TZ-500) and a no holds barred live show featuring the PornStarzz- sexy fetish performers who bring the sinister themes of BPCÕs music to life. Dark and disturbing, ~Cybersmut portrays a menacing world, a cesspool of sex and violence set to a thunderous robotic dance-beat, slashing guitars and layers and layers of heart-pounding programming. BPC won the coveted "BEST INDUSTRIAL" title from both Houston newspapers that year, including a nomination for ALBUM OF THE YEAR for its "rock solid programming"

If you find me at the show, you win a prize!

Leah

Toy drive and other ramblings...

Hmm… Updates…

Went to Sarah’s toy drive last night. (:P’’’ on those who missed it. You suck.) Holy shit it was cold! We ended up leaving halfway through Honkey’s set because we couldn’t stop shivering. Lauren and I went to the Ritz for like 20 min but I’ve been fighting this bug and I was totally exhausted so we took off to grab some late night fud and for me to crash headfirst into sleepy bliss. Mmmm sleeeeep…

I ended up getting books for the toy drive. I guess it’s kinda my shtick. I’ve always given my cousins books for Christmas just because I know kids don’t read as much as I’d like them to, and the crap they are reading is just that: crap. So in an effort to convert them to a more rational school of thought, I’ve become that one family member who you know just got you another bunch of goddamn books instead of a gift certificate like you really wanted. Thanks, Leah. You kick ass.

Hey; they’ll thank me in the long run.

I suppose.

So I considered this and picked up a deck of Uno cards on my way out. Hey, I loved Uno. Still do, as a matter of fact. Oooo maybe I should organize an Uno night at my house. Drunken strip Uno! That would be awesome! As long as I took pictures and invited strippers… Which could very well be done! Do not doubt my powers of persuasion! (Or my speed dial stripper list.)

I am soooo putting off schoolwork. But I’d like to justify it to myself by saying that I’ve been doing schoolwork since two this afternoon. Finished some accounting work and went to IHOP to immerse myself in bad coffee, terrible food, and Spanish and history homework. Whoop! Three hours and a pot and a half of coffee later, I picked up a stranded and thankful Ashley from Starseeds cause she had a flat tire. Huge gash in it, too. She has no idea how it happened, but she’s gunna make her man fix it later. Heh. Behold the power of helpless girl!

So the question is now… stay up and be a conscientious student, or load a bowl and watch X2 on DVD?

Well we’ll see how it goes.

Leah

In leu of (or in addition to) a toy, donations are very appreciated.

If you need more information, you can send me a message or call me on my cell...
Signed up for classes today finally. I'm taking French, US History, Amer Lit, and Managerial acct. Woohoo! Should be a fairly easy semester. And I'm taking real classes (except the finance class) so I'll be actually going to real school. Heh. Got an A in both my classes this summer (yay me) and I have two weeks to relax before classes start again.

Two very short weeks. :P

Went to H-Town this weekend to pick up some furniture from my aunt and uncle. I got a really nice new couch that's L shaped and COMFORTABLE as hell. It's awesome. Josh got a bed so now he's finally able to sleep in his own room (which I'm very happy about) and I can keep the downstairs area a bit more orderly. So PARTY at my house! Whoop! Just come over. I'm usually here. But it's BYOB so yea. :P I was so stressed out, though, on Tuesday because I had to read my last two chapters in my accounting class, unload and drop off the truck, take my test, and then go to work. And when I went to drop off the truck they told me I had to pay them another $40 because I dropped it off after 9am. Ok... Here's the thing. I paid about $170 for the truck, spent a good $40 on gas, and was already stressed out about my test, and they wanted another $40?! Oh HELL no. I explained that when I picked up the truck that no one specified a time to drop it off; he just said Tuesday. That's it. No "make sure you get it there before 9am because they'll charge you," just Tuesday. So I'm arguing with this guy (after waiting 15 minutes for him to get to me) and he informs me that his hands are tied because he's an independent UHaul and I need to go across the freeway to the affiliated UHaul. Christ. So I haul ass over there and this guy gets the brunt of the force because by this time I'm pretty livid. Finally he agrees not to charge me (probably because he was tired of hearing my mouth) and I rush home to study and then rush to ACC to take my test. By the time I got to work I was quite fettered. Some guy actually accused me of being geeked out because I was still trying to unwind from the day. Haha.

But I'm much more relaxed now. :)

Think I'm going to the Superjoint show on Sat at the Bathroom... Er Backroom. I just saw them last time they came, but you just can't get enough Phil, really. I'm making up for all the Pantera shows I missed. Honest.

Ok.. Gunna go make stew now. If you're hungry, come over in a few hours and it'll be ready. My stew KICKS ASS!

Leah

I just got my bills from my little ER visit a couple of weeks ago and, had I any idea it'd be this much I would have tried harder to get a hold of my friendly neighborhood drug dealer. Seriously.. It cost $1300 for them to guess that I had a muscle spasm and perscribe me Valium. And they couldn't even spell my last name right even after I told them twice while I was there. But I don't understand why the woman who checked me out told me she estimated it at $144.
Saturday I spent most of the day helping Mike and Ashley move.. Fun times! I can’t believe how much water I drank. Luckily we had several people helping so it wasn’t that bad. And they’re happy they got all the big stuff outta the way. Their house is really cute and is in Crestview (off Justin between Lamar and Burnet) and they’re really happy with their new little house. I’m jealous. :P

Saturday night, Jessica invites me to see a Flametrick show at Beerland with the cheerleaders in tow. Albeit a bit exhausted from moving day, I figure a coupla Lone Star tallboys and some good psychobilly aint hurt no one. Unbeknownst to me, Jessica and I had “We are open to all drunk guy conversation” written on our foreheads. We get there and while waiting for the band some random guy is asking me about the show… I talk them up of course pointing out I’ve been following them since ‘94 (thanks to Twizzlepop) and I make him let us in front so we could see better (the guy was tall, dude.) During the show some random drunk guy is buying the band beers and getting REALLY into the band while taking breaks to comment about his newfound love to us... Which is all well and good, and provided some entertainment. Then about halfway through the show another random guy starts talking to Jessica and, by the end I actually made a comment about being in shark infested waters because there were 4 different drunk ass dudes all trying to step in on our conversation. Seriously like breaking in to ask what I had said to Jessica.(!) It was pretty funny.

But the most hilarious part of the evening was that we saw Psycho Dave from New Orleans there talking to the cheerleaders and some other regulars. You remember Psycho Dave who took us to the seedy strip club while we were in New Orleans and wanted us to take him to Austin on our way back? Yea. He was there. Skull tattoo and all. After making generous fun at Jessica for running into him, he recognized her and I noticed his gaze was allllllllll up in her face for two or three songs. It didn’t help that we were standing right next to him. After a little while of staring her down he walked by and said “You should really let down your hair” (it was assumed he was referring to her hair being down in NOLA) and walked off to the other side of the stage. She was convinced he knew exactly who she was. I was more curious about how he knew the cheerleaders… It’s possible I didn’t recognize him before, but I go to a LOT of Flametrick shows and I know most of the regulars. I’ve not seen him at one.

Weird. But it did liven up the evening. Oh the show was kickass, by the way.

Sunday afternoon was spent at the Ritz customer appreciation party at Emma Long park. We went through 11 kegs. 11 KEGS! Jesus! Course, when you think of it in terms of all the alkies from the Ritz partying on the lake, it’s not that surprising. The party was pretty fun… Not nearly as much fun as last year but I was considerably less plastered so that might have had something to do with it. Plus this year no one camped out! I reeeeally wanted to camp out and had planned to do so with a couple of girl friends, but one of them got too wasted and started being whiney bitching about wanting to go home and such. Bitch. So we ended up leaving around 9 or so and then Jessica and I went back to the Ritz that night to hang out even though she had to be at work at 5am. :P Hey, she agreed to go, ok. :P We had a couple of beers and saw some of the fellow party goers, but it was pretty dead considering most of the regulars were passed out from earlier that day.

Good times.

I spent most of today finishing up my Business Ethics course and doing random homework… Last week of class so the pressure is on. I’m pretty much finished with that course but I still have a lot to do in my accounting course. Bleh. I suppose I should concentrate on that since DIXIE flaked out on me. Dammit. I couldn’t hang out last night because of the Ritz party, so we were supposed to work on the show today, but I called her earlier and she said “I’ll call you right back” and I haven’t heard from her since. I suppose I’ll call her again like a good bitch to hear her latest excuse. (sigh) I really should have worked tonight and blew it off to go and work with her, but they are CONSTANTLY flaking out on me! It’s starting to irritate me.

Ah well.

Tune in next week for more stories of debauchery!

Same bat time, same bat channel!

Leah

So last night I went to see the Modest Mouse show… Hmm… Less than impressive was the consensus. I had a migraine during most of the show so I thought it was just me, but Ashley and Mike agreed that they didn’t seem like they were all that into it. It’s not really my kind of music so I might be a little biased.. Lots of young people singing along getting on my nerves. We ended going to the Ritz for a lil bit and then Cucaracha’s and met up with Mishaal and Valeska and some people I knew in high school visiting from H-Town (H-TOWN!)

We came back home and Mishaal and those fools were hanging out next door… We drank a few beers and hung out. Then I got bored with them and snuck away to watch Two Towers. Heh. Josh ended up making a late night dinner for us so I ate the hell outta some home cookin. :P

I’m supposed to go see a show tonight with Noel.. I want to say it’s Ill Spent Youth at 710 but I’m not sure.. I think he’s still at work so he’ll prolly call me pretty soon. I’m all about some rock and roll!
Ok.. What part of my masochistic tendencies decided that Business Ethics would be a fun class to take? Christ, I despise this class. It’s the most socialist, anti-business, anti-capitalistic anti-LIFE text I’ve ever had the displeasure of wading through. And it’s so ridiculously easy that it becomes a tedious waste of my time. Thankfully I’m taking it online so I don’t have to sit through a lecture of this crap several times a week and I have the option of blowing through it faster than a typical class. The worst part is that I don’t even need the class; I took it cause I though it would be interesting. That’s the last time I sign up for a class without flipping through the text first. I was actually making notes in the book arguing with it. And what’s worse is that business students are taking this class! The message of the book is basically that business is evil and corrupted inherently and they have to make up for it by giving to the community. That’s it. 20 chapters of this shit. It doesn’t even define ethics until the fifth chapter and I still haven’t seen the name of a philosopher YET (and I’m about finished with the book.) Bah! I hate it! Hate hate hate!!!

At least the instructor doesn’t seem to be penalizing me for my anti-social sentiments. I seem to be the only dissenter in the class according to the (required) discussion group.

In other news… My finance class is kicking my ass. I get perfect scores on all the assignments, but my test scores are terrible. Evidently I’m not the only one; I usually score above the class average.. But the instructor seems to find this all very well and good.. Apparently we’re supposed to score low on the tests. Lovely.

So anyway… My car broke down the other day. That was fun. Apparently I need a new coil of some sort… Something to do with the fuel system. So I have to bust ass at work to get it out of hock.. er the shop where they’re holding it hostage. My baby is locked up! (/e extends bottom lip.)

Hmm… Suppose I should recap since I haven’t updated in so long…

Most recent events:

A few weeks ago I woke up with this terrible pain in my neck and shoulders that escalated to my complete immobility in the upper body for about a day and a half. The pain was so terrible that it was everything I could do not to break down when I tried to move. I eventually went to the hospital thinking it was a pinched nerve or something but they couldn’t find anything on the x-rays. BUT they did give me a nice dose of Dilaudid (a bit more potent than Morphine) which was nice… And a less than I would have liked supply of Valium, but still adequate. I was rather loopy for a couple of days. :) Though it did teach me to never go grocery shopping while high on pills. I had the munchies so bad that I blew a bunch of money at the grocery store and ate constantly for like three days. I was a bottomless pit! I probably gained 5 lbs. during the duration of my drug induced haze.

Regardless, my mom decided to come up and visit after I called her to let her know what was going on (she was kinna scared) and during the visit we decided that Josh should move in with me and she’ll pay our rent and for school.. All we have to do is make enough for bills and such. Sweet! Living with him again has been better than I feared in most respects…

…Apart from the whole him going to jail thing.. A few days ago I went to Wendy's show and wasn’t there for more than 10 minutes when I got a call from my brother’s friend delivering the news: A) your brother just got taken to jail for various traffic tickets he hadn’t taken care of and B) the car was impounded. Niiiiice. I didn’t really know what to do (had never been in that situation) so I hung out at the show for a little while, then decided to leave because I couldn’t concentrate and was way too stressed out. Went to where they had him locked up and as I was walking in the door he called me to let me know what was going on. He said he would be out in a few hours and gave me some information about the car. Noel and I went to pick up the car a little while later and just left it there with the keys hidden above the tire so I didn’t have to drive back to pick him up (he didn’t get out until about 8:30 the following morning.) Long story short, he has a bunch of community service and we’ve decided that he’s not ready for the responsibility of having a car (he’s a really terrible driver and has averaged about a ticket a month in the short time he’s been driving) and so we’re selling it and getting him a bike. I think that’s the best idea. Yea.

But I don’t want this to be a bunch of bad news…

In spite of recent events, I’m actually doing really well. Decided to quit the titty bar industry and I’m looking for a new part time job.. I’d like to get something waitressing or bartending where I could just work two or three nights a week. Hopefully I’ll find something in the next couple of weeks. And I’ve been seeing this guy Noel for a couple of months. I think he’s good for me. I’m not really ready to be in a relationship right now and I explained that to him and (luckily) he understands. We’re not really exclusive but I told him about my side projects (the whole BDSM thing) and he’s ok with that.. We just decided to tell each other if we want to see other people (other than those previously established.) We have a good time together.. He’s in a heavy metal band and I like dating a rock star. Heh. And despite the low test scores and me loathing one of my classes, I’m doing really well in school. I realized how much I missed it even taking courses online. Next semester I’m going to do some lecture classes and maybe another online course and I’m excited to be actually going to school again. Plus not having to worry about rent takes a huge weight off my shoulders and will allow me to concentrate on school and do well. Very happy.

Yea so I’m still the happiest person I know.

And I just finished some asparagus so now my pee smells funny. :P

Leah

I am hell bent on getting my second system up and running. Seriously. I've spent the last two hours figuring out which hard drive works... remembering I need jumpers sometimes... Threw away a 10GB cause it was fucked up and out of warranty (my bad,) etc... So now I'm "sitting back and relaxing" while Windows 98 installs on my computer. Fun times.

Ok time to install components.

Yay.

Leah

This Monday is Wendy Colonna's birthday and she's celebrating by playing for all us nice folks at Saxon Pub (1320 South Lamar.) Wendy is a local acoustic singer/songwriter (though she will be accompanied by a full fantastic band!) and plays music that's a little folksy and (since she's from Louisiana originally) a wee bit bluesy. She's opening for Bob Schneider and her set starts at 7, so don't worry about staying out past your bedtime one a school night.

Bring friends, gifts, money, or just yourself! It'll be a great show (Wendy has an awesome energy live and has no qualms about interacting with the crowd.) Check out her music at her site. And COME TO THE SHOW! If only because I'll be there. :)

Leah

Last night I stopped by the Rose on the way to Wendy Colonna’s show. I had muuuuuch fun. Met a friend at Wendy’s show and enjoyed being able to yell out requests and hear my favorite songs. Wendy was pretty buzzed and hugged me like 8 times (she’s sooooo cute!) after the show, thanking me for coming. I jokingly told her I should sing backup and she looked at me gravely and said “Are you serious? Do you know the words?” “Uh yea… I have the CDs and I sing along in my car all the time.” “Ok email me and we’ll rehearse. Seriously.”

But then again we were both pretty drunk.

Then I asked her for the guitar tab to Noah and she replied “Oh baby I’ll teach it to you.” (another hug) She’s so sweet. I emailed her today telling her that I’d settle for the chord prog. Heh. She’s playing again in Austin on the 30th at Saxton Pub which happens to be her birthday (bring gifts of cash!) so I’ll have to convince 80 people to go to the show with me. Heh. I wonder if the people at the Ritz would book her for the upstairs. They just reopened it and I’m sure they’re looking to fill slots. That would be awesome.

Dear LORD why am I up so early? I really need a nap before I go to work I’m sure.

Ok… breakfast taco time.

Leah
